Make chipotle lime salmon at home for a mouthwatering lunch
Chipotle anything is enough to make my mouth water, but add lime and salmon and it might as well be a waterfall. This dish is just spicy enough to take your taste buds on a ride they will never forget. Try this chipotle lime salmon plate from Closet Cooking for a quick lunch or dinner.
- 2 tablespoons oil
- 1 lime, juice and zest
- 1 chipotle chili in adobo
- 2 teaspoons adobo sauce
- 1/2 teaspoon cumin
- 1 clove garlic, grated
- salt and pepper to taste
- 2 pound salmon fillet
- Heat oven to 400 F.
- In a blender or food processor, puree the oil, lime juice and zest, chipotle chilies, adobo sauce, cumin and garlic until smooth.
- Cover a baking sheet in foil and place the salmon. Pat dry, season with salt and pepper.
- Spread on the chipotle mixture and bake until just cooked, about 10-15 minutes.
