American Heart Month: Care for your heart with a tasty avocado and olive oil egg roll

Avocado doesn’t only make a delicious guacamole, it also helps out your heart. Avocados are full is full of monounsaturated fat, which helps lower your LDL levels and raise your HDL levels.

Olive oil also keeps your heart healthy by lowering your LDL cholesterol and lowering your risk for developing heart disease. Olive oil can be used in replacement of butter when cooking. Also look for virgin and extra-virgin olive oils for a less processed alternative.

Who doesn’t love the Cheesecake Factory with all the varieties of cheesecake. But cheesecake isn’t the only tasty treat one their menu. These avocado egg rolls aren’t only rewarding to your taste buds, but also your heart.

Cheesecake Factory avocado egg rolls

Ingredients for egg rolls:

  • 1 cup olive oil
  • 3 avocados, halved, peeled and seeded
  • 1 Roma tomato, diced
  • 1/4 cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 8 egg roll wrappers

For cilantro dipping sauce

  • 3/4 cup fresh cilantro, loosely packed
  • 1/3 cup sour cream
  • 1 jalapeño, seeded and deveined, optional
  • 2 tablespoons mayo
  • 1 clove garlic
  • Juice of 1 lime
  • Salt and pepper, to taste

Directions for dipping sauce:

  1. To make the cilantro dipping sauce, combine cilantro, sour cream, jalapeño, mayo, garlic and lime juice in a bowl. Season with salt and pepper to taste, set aside.

Directions for egg rolls:

  1. Heat olive oil in a large skillet over medium high heat.
  2. In a medium bowl, gently mash avocados. Add tomatoes, red onions, cilantro,lime juice and salt and pepper to taste. Gently toss to combine.
  3. Working one at a time, place avocado mixture in the middle of the wrapper. Bring the bottom edge of the wrapper tightly over the filling, folding in the sides. Continue rolling until the top of the wrapper is reached. Using your fingers, rub the edge of the wrapper with water, pressing to seal. Repeat with the rest of the wrappers.
  4. Work in batches, add egg rolls to the skillet and fry until evenly golden and crispy, about 2 to 3 minutes. Transfer to a paper towel-lined plate.
  5. Serve immediately with cilantro dipping sauce.
