Elkhart residents will be able to get their fill of burritos at Shoppes on Six come March.
Qdoba Mexican Grill and Noodles & Company both plan to open their doors next month at Shoppes on Six, located at the corner of Cassopolis Street and C.R. 6. in Elkhart, company officials said. However, no official grand opening date has been set for either of the chain restaurants.
The opening of the restaurants was announced in June by developer Thompson Thrift, and construction started in July. “Hopefully, we’ll see them open in spring. We’re excited to have them there,” Ryan Menard, vice president of the developer, said. Exteriors of both the restaurants appear to be completed with outdoor eating areas.
Construction crews could be seen working on the inside of Qdoba on Monday, Feb. 8. Megan Prejzner, the brand manager for Qdoba, said they are aiming for a mid-March opening date. They hope to announce a finalized date for the public soon.
On the other side of the Shoppes on Six, it looks like most construction is done within the noodle restaurant. They also plan to open in March, Erin Murphy, the senior manager of communications, said. Owners have applied for a liquor license with the Indiana Alcohol & Tobacco Commission.
Both restaurants are looking to hire 25 to 30 full-time and part-time employees.
