In what’s been a restaurant for decades, the Cortes family wanted to do something new.
“We think this place needed a change,” said Maria Cortes, who is operating Grandpa’s Concord Kitchen with her father, Rodrigo, and brother Rodrigo Jr.
“This place” is the former Minuteman Drive-In at 23677 U.S. 33, Elkhart. The former root beer stand has been a bunch of restaurants in recent years, including Miranda’s, El Real Taco and Around the Corner Cafe.
The Cortes family took it over last year and opened Nov. 23. After remodeling and putting forth a wide-ranging menu, the family is planning changes to make it even more different.

The family had opened a restaurant called La Posada in 2008, but it didn’t survive the recession, she said.
Grandpa’s, just down the road from longtime pancake house Granma’s, which is owned by someone else, doesn’t have conventional hashbrowns. There are country potatoes and a hashbrown casserole. The plates are square. The coffee cups have logos. The menu is a mix of American and Mexican cuisines.
Skillets and omelets sell well at breakfast. Wraps and hand-pattied burgers do well at lunch and dinner. Business has been good since the day they opened, she said.
The restaurant has started to offer all-you-can-eat specials. On Thursdays, there have been rib tips for $10.99. On Fridays, there’s fish for $9.99.
Now that the first couple months have gone well, more specials will be available, Rodrigo said. He wants to add some appetizers and desserts and beer and wine will be available.
The biggest change since opening will be soon extending the hours on Friday and Saturday nights. Instead of closing at 8 p.m., the family plans to keep Grandpa’s open until 2 a.m. and serve only tacos after 8.
The morning hours will change slightly on some days and the new hours will be from 6 a.m. to 8 p.m. Monday to Thursday, 6 to 2 a.m. Friday, 6:30 to 2 a.m. Saturday and 6:30 a.m. to 3 p.m. Sunday.
