Last June, developer Thompson Thrift announced the opening of the fast-casual pasta chain and Mexican eatery in its new Shoppes on Six building located at the corner of Cassopolis Street and C.R. 6. in Elkhart. Since then anybody who is a fan of both these restaurants has been keeping an eye on the progress of construction.

Thompson Thrift leasing associate Jo Anna Tumbarello said on Monday that the two food chains are about 30 to 60 days away from being able to open at the Shoppes on Six location.
“Everything has been progressing smoothly,” said Tumbarello.
For sports-minded fans, Tumbarello also mentioned that Hibbett Sports will be opening a new 4,000 square foot store next to Maurices in the Shoppes on Six plaza. Hibbett Sports is one of the fastest growing retailers specializing in sports merchandise, fashion and footwear in the country with over 1,000 stores in 31 states, according to their website.

Thompson Thrift Vice President Ryan Menard said that the Shoppes on Six development has been a great asset.
“The performance of the development has been very strong and we are happy with what we have seen so far,” said Menard.
