Celebrate National Brownie Day 2015 with one of these choice recipes

Happy National Brownie Day! Brownies are an amazingly mouth watering dessert. Of course there is the classic chocolate brownie and a remake of the tempting Cosmic Brownie we all loved as kids. And instead of making some hot cocoa for your festive mug, you create some effortless but enticing mug brownies? It’s time to preheat the ovens and celebrate National Brownie Day!


Ultimate Double Chocolate Brownies


• 3/4 cup cocoa 

• 1/2 teaspoon baking soda

• 2/3 melted butter, divided

• 1/2 cup boiled water

• 2 cups sugar

• 2 eggs

• 1 1/3 cup flour

• 1 tsp vanilla

• 1/4 tsp salt

• 12-ounce package chocolate chips


1. Preheat oven to 350 degrees.

2. In a large bowl, combine cocoa and baking soda. Blend in 1/3 melted butter. Add boiling water and stir until well blended.

3. Stir in sugar, eggs, and remaining butter. Add flour, vanilla, and salt. Stir in chocolate chips.

4. bake in a 9×13 pan.


Copycat Cosmic Brownies



• 3/4 cup melted butter’

• 2 eggs

• 1 cup sugar

• 2/3 cup brown sugar

• 2 tbsp water

• 2 tsp vanilla

• 3/4 cup unsweetened cocoa powder

• 3/4 cup flour


• 1 1/2 cup semi-sweet chocolate chips

• 1/2 cup heavy cream

• Candy sprinkle decorations


1. Preheat oven to 350 degrees.

2. Line a 9×13 pan with parchment paper or aluminum foil and spray with non-stick spray.

3. Combine melted butter, eggs, sugar, brown sugar and vanilla in a large bowl and whisk to combine.

4. Whisk the cocoa powder until incorporated.

5. Pour batter into prepared pan.

6. Lightly smooth and level the top.

7. Bake 25 to 30 minutes or until toothpick inserted in the center comes out clean.

8. Allow to cool in pan.

9. Microwave chocolate chips and cream in a medium bowl for 1 minute.

10. Whisk until smooth

11. Pour icing over cooled brownies and lightly smooth.

12. Refrigerate for 15 to 30 minutes to allow icing to slightly firm.

13. Add sprinkles to top and return to refrigerator to finish setting.

Mug Brownie


• 4 tsp unsweetened cocoa powder

• 8 tsp granulated sugar

• 1 dash of salt

• 1 drop of vanilla extract

• 8 tsp plain flour

• 4 tsp butter


1. Add your butter to the mug. pop this in the microwave until it has melted.

2. Add water and vanilla extract to butter and then mix.

3. Add pinch of salt and stir in all other ingredients one by one to make a nice batter. Make sure there are no lumps of dry ingredients.

4. Put it in the microwave for 60 to 90 seconds.

5. Remove carefully, allow to cool for a few seconds, then enjoy!
