National Cookie Day 2015: Traditional and nontraditional cookie choices

Today is National Cookie Day! Why not honor the day with some simply delicious cookie recipes? From the classic warm and gooey chocolate chip cookie to the unique but simple cinnamon roll cheesecake cookie, there is a mouth watering cookie recipe to help you celebrate this beautiful day.

Soft and Chewy Chocolate Chip Cookie

Ingredients

• 3/4 cup unsalted butter, softened

• 3/4 cup light brown sugar, packed

• 1/4 cup granulated sugar

• 1 large egg

• 1 tsp vanilla extract

• 2 cups all-purpose flour

• 1, 3.5-ounce packet of vanilla pudding mix

• 1 tsp baking soda 

• pinch of salt

• 1, 12-ounce bag of semi-sweet chocolate chips

Directions

1. To the bowl of a stand mixer fitted with the paddle attachment (or large mixing bowl and electric mixer) combine the butter, sugars, egg, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.

2. Scrape down the sides of the bowl, and add the flour, pudding mix, baking soda, optional salt, and beat on low speed until just combined, about 1 minute.

3. Scrape down the sides of the bowl, and add the chocolate chips, and beat on low speed until just combined, about 30 seconds.

4. Using a large cookie scoop, 1/4-cup measure, or your hands, form approximately 14 equal-sized mounds of dough, roll into balls, and flatten slightly. Tip – Strategically place a few chocolate chips right on top of each mound of dough by taking chips from the underside and adding them on top.

5. Place mounds on a large plate or tray, cover with plasticwrap, and refrigerate for at least 2 hours, up to 5 days. Do not bake with unchilled dough because cookies will bake thinner, flatter, and be more prone to spreading.

6.Preheat oven to 350F, line a baking sheet with a cooking spray. Place dough mounds on baking sheet, spaced at least 2 inches apart and bake for about 11 minutes, or until edges have set and tops are just set, even if slightly undercooked, pale, and glossy in the center; don’t overbake. Cookies firm up as they cool. Allow cookies to cool on baking sheet for about 10 minutes before serving. 

 

Andes Mint Chip Soft Fudgy Chocolate Cookies

Ingredients

• 3/4 cup unsalted butter, softened

• 3/4 cup light brown sugar

• 1/4 cup granulated sugar

• 2 large eggs

• 2 tsp vanilla extract 

• 1 packet instant chocolate pudding mix

• 1 tsp baking soda

• pinch of salt

• 1 10-ounce bag Andes Creme de Menthe Baking chips (try Walmart, Target or any regular grocery store)

• 3-ounces of dark chocolate, chopped.

Directions

1.  In a mixer,combine the butter, sugars, eggs, vanilla, and beat on medium-high speed until creamed and well combined, about 4 minutes.

2. Scrape down the sides of the bowl, and add the pudding mix and cocoa and beat on low speed until just combined, about 1 minute.

3. Scrape down the sides of the bowl, and add the flour, baking soda, optional salt, and beat on low speed until just combined, about 1 minute.

4. Scrape down the sides of the bowl, and add the Andes chips, chopped chocolate, and beat on low speed until just combined, about 30 seconds.

Cinnamon Roll Cheesecake Cookie

Ingredients

• 1 package of sugar cookie mix, plus ingredients needed to make the cookies

• 1 package of Cinnamon Roll Flavor Creations from Duncan Hines

• 1 box of cheesecake flavor pudding mix

• 1 cup white chocolate chips

Directions

1. Preheat oven according to the directions on the cookie mix

2. Combine all ingredients. Make one inch sized balls out of the cookie mix space 2 inches apart n parchment paper. 

3. Bake according to instructions on the cookie package.
