Uncooked, a new feature of Flavor 574, starts with a conversation with Chip and Summer Lewis, owners of Iechyd Da Brewing Company in Elkhart. After opening Elkhart’s brewpub in June 2012, the duo has continued to make positive change in their hometown by getting involved with events like Taste of the Gardens, South Bend Brew Fest and more. You can usually find Chip doing the brewing while Summer works with staff and interacts with her customers out front. Interview from Tuesday, Sept. 1.

What did you have for breakfast today?

Summer: Everything bagel.

Chip: Nothing. 

What is your current frame of mind?

Summer: Excited for a new week. It’s all about the to-do list right now.

Chip: Rested.

What is your biggest extravagance?

Summer: I have a bit of a perfume collection going.

Chip: Watches.

What trait do you most deplore in others?

Summer: Laziness.

Chip: Lack of common sense.

If you could cook or brew for one person, who would it be?

Summer: Chip. It’s more about cooking for loved ones.

Chip: The Welsh rugby team.

What’s the best gift anyone has ever given you?

Summer: For my little perfume collection…a mirrored tray with perfume from Chip. He wrote it all down along the way and it’s like “You remembered! I didn’t even remember!”

Chip: A large photo (from Summer) of my motorcycle that was in a magazine.

What’s the wildest thing you’ve ever eaten?

Summer: Oysters.

Chip: Octopus with the sucker on it.

Which of your five senses is the strongest?

Summer: Smell.

Chip: Taste.

First job?

Summer: Corn detasseling. It was rough.

Chip: Bag boy at Kroger.

What motto or mantra do you live by?

Summer: Keep it simple. Do it well.

Chip: Or do it better.

Preferred way to travel?

Summer: Motorcycle.

Chip: Motorcycle.

Who or what is your biggest motivator?

Summer: (Points to Chip) We push each other.

Chip: Her.

Favorite smell?

Summer: Flowers.

Chip: Race gas.

How do you define success?

Summer: Being happy where you’re at, but always moving forward.

Chip: Being the best you can and being content.

What’s your favorite hobby outside of the kitchen?

Summer: Being a homebody. Hanging at home.

Chip: Riding motorcycles.

What’s one skill you still want to master?

Summer: Being a beer whisperer.

Chip: Making better beer.

What is your signature trait or characteristic?

Summer: Customers would say my smile. The folks behind the scenes would say “The Stare.” I wear it all on my face.

Chip: Levelness.

Advice to your younger self?

Summer: Don’t worry so much.

Chip: Drive slower.

What’s one kitchen tool you can’t live without?

Summer: A sharp knife.

Chip: Oar. It’s literally a boat oar that I use when brewing. 

Foods you’d never eat?

Summer: Liver. I’m not doing it.

Chip: I’m never eating something fake, like those fake meats. If I want a hot dog, I’ll eat a hot dog.
