Take a culinary vacation in Greece with a Mediterranean cooking class

Good food can transport you, and a spring cooking class at Saint Andrew Greek Orthodox Church wants to take you and your taste buds on a trip to Greece.

The church’s School of Mediterranean Cookery will host “A Summer in Beautiful Greece” cooking class, 3 to 6 p.m. on Sunday, May 3.

Cooking demonstrations, recipe sampling, discussion and a video presentation will all be part of the program.

“What we’re trying to do is expose people to the Mediterranean diet which is known to be very healthy — very flavorful and delicious,” said Spyro Sinis-Terezis, coordinator for the cooking school.

Another goal is to teach students about Greek culture, Sinis-Terezis said.

“They’re going to kind of feel like they took a vacation to Greece,” she said.

Recipes served during spring and summer in Greece will be sampled and demonstrated including:

  • tzatziki, a yogurt and cucumber dip with a hint of garlic
  • briami, an oven-roasted vegetable medley
  • souvlaki, savory pork shish kebabs
  • marithes, which is fried smelt
  • halva, a “decadent” semolina dessert, Sinis-Terezis’ favorite
  • horiatiki salata, which is true Greek salad with tomatoes, cucumber, olives and “a glop” of feta cheese on top

Sinis-Terezis said horiatiki salata is one of those salads that just needs some crusty bread to make it a full meal.

“It really holds you really well,” she said.

Students will have the opportunity to learn about the Mediterranean diet pyramid, as well. The Mediterranean diet is based on fruits, vegetables and grain.

“It’s all fresh ingredients, they’re not altered very much,” Sinis-Terezis said.

“The shortening is the extra virgin olive oil, which has no cholesterol; sugar is eaten sparingly,” she said, adding that there’s “not a lot of meat in the Mediterranean diet, either.

Why is Greek food so special?

Diet is a big part of maintaining health, she said.

“But we all love to eat great food,” she said. “With Greek food, we get all of that, the health benefits with the great taste.”

This is one of two classes offered each year by the School of Mediterranean Cookery. The next one will be in October.
