A sign in the window of 41 Degrees North has stated the new restaurant will be open by April 1.
It’s no joke. The restaurant will open to the public Tuesday, March 31.
“I’m stoked,” said owner Austin Slabach. He said he hasn’t been sleeping much, but he’s nearly ready to unveil Middlebury’s newest eatery.

Hours: 10:30 a.m. to 11 p.m. Tuesday through Thursday, 10:30 to midnight Friday and Saturday.
With family, he started renovating the former Winner’s Circle bar at 104 S. Main St. in early 2014. Beneath the horsehair plaster, they discovered a historic mural painted on the wall in 1880.
Hours and hours of work have produced a gleaming restaurant and kitchen with touches of history and a new take on drinking and dining in Middlebury.

In late January he said he hope to open in a month. It took two, but that hasn’t diminished the excitement in the town.
He’s had three soft opening events at lunch and several dinner events are planned prior to Tuesday. He asked for people to offer criticism. “People have loved it,” he said, but added that some have offered critique too. “I got told some great things on portion sizes and so on.”
The restaurant will open 10:30 a.m. to 11 p.m. Tuesday through Thursday, 10:30 to midnight Friday and Saturday. Breakfast service will come later, after the initial opening, he said.
He’s thrilled to be offering local cheese, meat and produce on the menu. He’s got Bell’s, Three Floyds and Greenbush on tap. He also knows he’s a new restaurant and there will be wobbles.
“I just hope people coming in definitely enjoy their time here,” he said. “I hope there’s understanding that we’re doing the best we can.”
