For three years now, the Elkhart Knights of Columbus have hosted a fundraiser that brings chicken and potatoes cooked in the style of Shakey’s Pizza Parlor back to the city. The restaurant was once an Elkhart staple, but closed its doors in the late ’80s. Organizers of the annual fundraiser, which was held from noon to 6 p.m. Saturday, Jan. 24, said they expected to serve up more than 3,000 pieces of chicken and about 1,500 potatoes to around 1,000 guests.
