Joyce from Wakarusa was having trouble making a good meatloaf, and asked her fellow readers to share their secrets to success.

Lorene from Goshen got her recipe for meatloaf from a magazine years ago.

Carol from Adrian, Mich., sent in her recipe for meatloaf topped with a sweet glaze.

LORENE’S MEATLOAF

Ingredients

  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 2 or 3 tbsp. dried parsley
  • 1 tsp. pepper
  • ½ tsp. dry mustard
  • 2 garlic cloves, minced
  • 1 egg, beaten
  • 1 cup milk or tomato juice
  • 1 slice bread, torn or cut in small pieces
  • 1½ lbs. ground round
  • ⅓ cup ketchup

Directions

  1. Preheat oven to 350 degrees. Combine onion, green pepper, parsley, pepper, dry mustard, garlic, egg, milk (or juice) and bread pieces. Stir until thoroughly mixed. Add ground round and stir just until blended.
  2. Shape into a loaf and place in a 9 by 13 inch pan. Spread ketchup on top. Bake for 1 hour then let stand in the pan for 10 minutes before serving.

CAROL’S MEATLOAF

Ingredients

Meatloaf:

  • ⅔ cups bread crumbs
  • 1½ lb. ground beef
  • 1 cup milk
  • 2 eggs
  • Small onion, chopped
  • 4 tsp. dry mustard
  • 1 tbsp. Worcestershire sauce
  • ¼ tsp. sage
  • Salt and pepper

Topping:

  • 3 tbsp. brown sugar
  • ¼ cup catsup
  • ¼ tsp. nutmeg
  • 1 tsp. dry mustard

Directions

  1. Mix together all of the meatloaf ingredients then pat into a loaf pan. Bake for 50 minutes at 350 degrees.
  2. Mix together topping ingredients and pour over meat loaf.
  3. Return meatloaf to oven and bake for 10 more minutes.

MATT’S MEATLOAF

Ingredients

  • 1½ lbs. ground beef
  • 1 egg
  • 1½ lbs. ground pork
  • 2 tbsp. grated onion
  • ½ cup bread crumbs
  • 2 tbsp. chopped parsley
  • ½ cup tomato juice
  • 2 tsp. salt
  • ¼ tsp. poultry seasoning
  • Bacon

Directions

  1. Preheat oven to 350 degrees. Mix all ingredients except the bacon in a large bowl.
  2. Place mixture into a loaf pan and pack down lightly. Arrange strips of bacon over top.
  3. Bake uncovered for 1 hour.
