Josh Royer joked that he’s been working on Primo Italian Eatery for a couple weeks.
It’s funny because perhaps no restaurant owner has ever said construction took less time than expected.
Primo Italian Eatery will open at 201 W. Marion St. on Wednesday, Dec. 10. The restaurant has been slowly emerging at the corner of Second and Marion across the street from The Elkhart Truth and Flavor 574 offices.
Royer closed his Vesuvio’s Pizza location in July 2012 in Parkmor Plaza, because with Bayer Corp. and other businesses on that side of town changing, he saw less business.
He started work on the new downtown restaurant in March 2013, but things came up. Royer worked full-time and had to remodel the building in his spare time, which takes a while.
The initial menu will include pizza, sandwiches, salads and appetizers, but not fried foods. The restaurant will have dine-in seating for about 15 people, as well as carry-out and delivery.
“It feels good to finally get this project done,” Royer said.
Hours will be 11 a.m. to 9 p.m. Monday to Wednesday, 11 a.m. to 10 p.m. Thursday and Friday, 4 to 10 p.m. Saturday and 4 to 9 p.m. Sunday.
