Recipes of the week: Chocolate cake

A couple of weeks ago, Beth from Hastings, Mich., asked for help finding recipes for rich, moist chocolate cake and frosting.

Karen from Lake City, Mich., is always asked to make her chocolate sheet cake with chocolate frosting for potluck dinners and family gatherings.

Betty from Quincy, Mich., guarantees that her chocolate cherry cake is moist and irresistible.

Becky from Adrian, Mich., says her chocolate spice cake is delicious with a cup of hot coffee.

CHOCOLATE SHEET CAKE WITH CHOCOLATE FROSTING

Ingredients

Cake:

  • 2 cups flour
  • 3 tbsp. cocoa powder
  • 2 cups sugar
  • 2 eggs, beaten
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 1 cup water
  • ½ cup buttermilk
  • 1 cup butter or margarine
  • 1 tsp. vanilla

Frosting:

  • ½ cup butter or margarine
  • 6 tbsp. evaporated milk
  • 3 tbsp. cocoa powder
  • 3¾ cups powdered sugar

Directions

Cake:

  1. Sift flour, sugar and salt into a bowl.
  2. Place water, butter and cocoa powder in a saucepan. Bring to a boil. Remove from heat and add flour mixture, mixing well. Add eggs and stir to mix.
  3. Mix together baking soda, buttermilk and vanilla. Add to saucepan mixture.
  4. Pour into a greased jelly roll pan. Bake for 20 minutes at 350 degrees.

Frosting:

  1. Heat butter, evaporated milk and cocoa until butter is melted. Stir to mix well.
  2. Add to powdered sugar and mix until creamy. Frost cooled cake.

CHOCOLATE CHERRY CAKE

Ingredients

Cake:

  • 1 devil’s food cake mix
  • 1 can cherry pie filling
  • 2 eggs, beaten

Frosting:

  • 1 cup white sugar
  • ⅓ cup milk
  • 5 tbsp. margarine
  • 8 oz. chocolate chips

Directions

Cake:

  1. Combine ingredients and mix with mixer until blended. Mixture will be stiff.
  2. Bake at 350 degrees for 45 minutes or until done.

Frosting:

  1. Heat ingredients and boil for 1 minute. Remove from heat and stir in chocolate chips until smooth.
  2. Frost while cake is still warm.

CHOCOLATE SPICE CAKE

Ingredients

Cake:

  • 2 cups flour
  • 2 eggs, beaten
  • 2 cups sugar
  • ½ tsp. cinnamon
  • 1 cup butter
  • 1 tsp. baking soda
  • 4 tbsp. cocoa
  • 1 tsp. vanilla
  • 1 cup cold water
  • ½ cup sour milk

Frosting:

  • ½ cup butter
  • ⅓ cup milk
  • 4 tbsp. cocoa
  • 3½ – 4 cups confectioners’ sugar

Directions

Cake:

  1. Mix together flour, sugar, cinnamon and baking soda. Set aside.
  2. Bring butter, cocoa and water to a boil. Remove from heat and add eggs, vanilla and sour milk. Pour over top of flour mixture and blend well.
  3. Pour into a 10½ x 15½ inch pan. Bake for 30 minutes at 350 degrees.

Frosting:

  1. Place butter, milk and cocoa in a saucepan. Heat just until butter melts. Stir to blend. Add powdered sugar and blend.
  2. Spread on cooled cake.

Note: to make sour milk, add 1 tablespoon of vinegar to 1 cup of milk.
