Recipes of the week: Brownies

A few weeks ago, Marie from Litchfield, Mich., wrote in asking for some made-from-scratch brownie recipes. Here’s what her fellow readers sent into help.

Edna from Litchfield, Mich., says it’s best to keep a good brownie recipe nice and simple. She sent in her favorite recipe for blonde brownies.

Connie from Tecumseh, Mich., sent in her recipe for zucchini brownies that are very moist. No one will know they’re made with zucchini unless they are told.

Carol from Middleville, Mich., has made her brownies ever since her children were toddlers. They’re all grown with families of their own now.

BLONDE BROWNIES

Ingredients

  • ⅔ cup butter or margarine
  • 2 cups brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • ½ tsp. baking soda
  • 1 cup chocolate chips
  • ½ cup chopped walnuts

Directions

  1. Grease an 8 inch square baking pan.
  2. Melt butter in a saucepan. Add brown sugar and stir until blended.
  3. Slightly beat eggs and vanilla together. Add to butter mixture and mix.
  4. Sift together flour, baking powder, baking soda and salt. Add to butter mixture and stir well. Stir in chocolate chips and walnuts.
  5. Spread batter in baking pan. Bake at 350 degrees for 25 to 30 minutes.

ZUCCHINI BROWNIES

Ingredients

  • 4 eggs
  • 1½ cups oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 cups flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 4 tbsp. cocoa
  • 1 tsp. vanilla
  • 3 cups shredded zucchini
  • 1 cup chopped nuts (optional)

Directions

  1. Combine and mix flour, cinnamon, cocoa, baking soda and salt.
  2. Beat eggs, oil and both sugars. Mix thoroughly. Add vanilla.
  3. Add ¼ of dry mixture at a time to egg mixture. Mix thoroughly after each addition. Stir in zucchini and nuts.
  4. Grease the bottom of a 10 x 15 inch pan. Pour in mixture and bake for 30 minutes at 350 degrees.

Note: Half a container of chocolate frosting mixed with half a container of cream cheese frosting, or any chocolate frosting can be used to frost brownies.

BROWNIES

Ingredients

  • 2 c sugar
  • 1 1/2 c flour
  • 1/4 c cocoa powder
  • 1 t salt
  • 1 c butter
  • 2 t vanilla
  • 4 eggs
  • 1/2 c chopped walnuts, or any other kind of nut

Directions

  1. Melt butter in a large saucepan along with cocoa and sugar. Beat eggs and vanilla then add to butter, mixing well.
  2. Mix together flour and salt. Add to mixture in saucepan. Stir in nuts.
  3. Pour batter into a greased 9 x 13 inch baking pan. Bake at 350 degrees for 25 minutes.
