Zoup! soup to open with 100 flavors in Michiana this fall

A new soup restaurant will open in Mishawaka this fall, providing more than 100 recipes to eat with a spoon. Zoup! Fresh Soup Company has 67 restaurants across the country. After Kevin Pearson had a “phenomenal bowl of soup” at one of its Michigan locations, he decided Michiana needed a Zoup!, too.

Pearson, a Granger native, spent 35 years in transportation management but was “ready to steer his own boat.” He looked into other food-based franchises, such as frozen yogurt and coffee, before settling on Zoup! with his wife, Susan.

“I knew I needed to be passionate about what I was selling,” Pearson said. “This soup sells itself.”

Zoup! will start serving bowls in early September, with 12 daily soups out of 100 recipes in rotation. Recipes can be as simple as gazpacho, vegetarian split pea or French onion. On the heartier side, there’s Jamaican Bay Gumbo with sweet potatoes and jerk seasoning; lobster bisque with butter, lobster and crawfish; spicy lentil with sausage; or Frontier 7 Bean with peas, lentils and five different kinds of beans.

Pearson’s favorite is the chicken pot pie soup with vegetables and pie dough. “There’s something for everyone – gluten-free, low in calories, vegetarian and dairy-free,” Pearson said.

The restaurant will also serve sandwiches and salads; every bowl of soup comes with a “you-pick-two” option. Customers can sample any of the day’s soups before ordering. The restaurant also provides salads, sandwiches and soft drinks, and will offer group catering for businesses and events.

“We are excited to bring the Zoup! brand and culture to Mishawaka,” said Pearson. “It’s unique in that I don’t think anyone else in the area serves 12 soups daily. As soon as you walk in the door, you can sample anything before you buy it.”

Zoup! Fresh Soup Company was started by Eric Ersher in 1998. The Mishawaka location will be open from 11 a.m. to 8 p.m. Monday through Saturday and 11 a.m. to 6 p.m. Sunday in the Princess City Plaza at 4334 Grape Road, starting early September.
