A beef and bean burrito inspired Mexican dip

As parents, I’m sure you all know the struggle of trying to feed a gaggle of kids, all with different likes and dislikes, whenever there’s a birthday party, sleepover or play date. The challenge is particularly daunting when you’re on a budget and don’t feel that splurging on delivered pizza will be an option.

My mom faced the same struggle as I was growing up since my brothers and I seemed to always have at least one friend over each weekend. Her solution, and one I’ve adopted with my own family, was to create a bean and beef burrito-inspired dip. This dip is not only a crowd pleaser, but also is super quick to make and only requires a few inexpensive ingredients.

The basic ingredients are: hamburger, taco seasoning, refried beans, shredded cheddar cheese and salsa, all to be served with tortilla chips for dipping. The process is as simple as the list of ingredients. Just brown up the hamburger in a large skillet, season with the taco seasoning, add the refried beans and cook until softened and warmed, mix in salsa and top with the shredded cheddar.

Additional ingredients can be added to taste or placed on the side for each child to add as they see fit. Some favorites in my house are finely chopped onions, diced tomatoes, sour cream, guacamole, black beans, lettuce and avocado.

The dip can also be served in a variety of ways beyond the simple combination of dip and chip. It can be stuffed into soft tortillas (corn or flour), placed in hard taco shells or served on a bed of lettuce as a taco salad.

Another tasty version can be made by placing the dip in flour tortillas, placing them in a baking dish, covering with enchilada sauce and cheddar cheese and heating until all cheese is melted and the enchiladas feel warm.

  • 1 ½ lb lean ground beef
  • 1 packet taco seasoning (any brand will work)
  • 2 16-oz cans of refried beans (I like Old El Paso myself, but any brand will suffice)
  • 1 15-oz jar of salsa (mild, medium, or hot depending on taste)
  • 1 8-oz package of shredded cheddar cheese to place on top (a Mexican or taco blend cheese is also very tasty)
